It is widely known that during the Middle Ages monasteries were not only guardians of knowledge, but also of flavors. About the year 928 there are records of a donation from Count Álvaro y Savita to the San Clodio monastery located on the banks of the Avia River in Galicia that included, among other goods, vines from the Rhine which gave rise to Ribeiro wine. The space dedicated to this reception shares many similarities with the French châteaux and represents much of that enological culture. A chimney, a library, armchairs and soft bedroom light create the atmosphere. Visitación is the person in charge of receiving visits and she transmits her enthusiasm with wit and cultivated application.
